Can I change caption style each episode if the topic changes?

You can. The channel will not look authored. Lock a family from caption styles and burn it with add captions. Topic is the script. Type is the house.

Why not just attach last week's stills to a new Omni generate?

Omni's references are a casting call, not a first frame, and the quota is seven slots with videos costing two. The scene is still new. A saved workflow is the object that remembers wardrobe and palette. Use that.
